the return of good coffee on Eastlake

Residents of the Eastlake neighborhood no doubt still wince when passing by the construction site where the small but world-reknown Hines Public Market Coffee once stood. But directly across the street from that sad hole in the earth a new hope went live today in the form of Sitka & Spruce’s first day of morning espresso service.

Chef Matt Dillon’s little place serves up some of the awesomest eats in town and he is keeping the same high standard for the new morning cafe. Hines alumna Bronwen Serna is pulling the shots on a brand new tricked-out La Marzocco and most of the lucky locals who wandered in today were her old customers. Even the beans have some Hines heritage having been roasted by ex-Hines roaster Celeste Clark.

Matt laid some interesting edibles on us and I’m guessing that morning visitors will find some great pastries emerging from the kitchen. It’s hard to believe that a place so fantastic shares a wall with a Subway sub shop, but once inside you feel transported to a different, more civilized world.

Sitka & Spruce is at 2238 Eastlake, just south of Lynn (across from where Hines once stood, in the old Sophies doughnuts spot). They’ll be opening their doors at 7am and you should check them out.

Update from Bronwen: “…sitka & spruce is serving coffee by vashon island coffee company and we will also be serving ‘guest coffees’ from local and national roasteries periodically. for example, tomorrow, tues 19 july, french presses featuring coffee by stumptown coffee roasters in portland, and hines public market coffee, ltd. in vancouver, b.c. (formerly hines public market coffee inc. of the eastlake neighborhood. still roasted by john sanders!). we will have some cup of excellence auction coffees and various varietals in addition to the espresso menu.”

    this is great news. I never visited Hines, but I felt their influence (among others in the PNW) in my faraway Atlanta, GA.

    Now, could we please get somebody to open a place this good in Vienna?

    Had a most memorable cup when I last visited Hines in 2005. Sad that it was knocked down but sitka & spruce is another great reason to return to Seattle in the future :)
